The Gluten-Free Pizza of Your Dreams!

Are you ready to have your world rocked by this amazing gluten-free pizza recipe?
Truly, not sure if you are...
it's life changing.
So, if you've read some of my earlier blog posts, you already know I am a pasta addict. What I didn't tell you, was that my addiction stretches much further than beautiful pasta dishes... it also includes
beautiful, thick and crunchy pizzas... Shocking, I know right ;)
As a newbie in the gluten-free world, I had no idea what challenges awaited me when it came to looking for suitable gluten-free pizzas. I searched the web for local gluten-free pizza restaurants and tried any at home recipe I could find, but they all lead to me having a few bites of chewy, cheese covered cardboard, envying all my non-gluten intolerant friends. I got so fed up with the terrible pizza options that I decided to create a recipe of my own and didn't stop until it was perfect.

The exploration was long and hard but we finally made it... the perfect gluten-free pizza crust recipe is here!
To create this pizza, it takes time. So, make sure you start this recipe as soon as you come home from work to enjoy by 8pm, or you could work on it with friends on a rainy (hungover) Sunday afternoon!
What you'll need:
1. 3 cups self-rising gluten-free all purpose flour - make sure it contains gum on ingredients list
2. 1/4 cup olive oil
3. 1 1/8 cup of warm water
4. 1 tablespoon instant yeast OR 1 1/2 tablespoon active dry yeast
4. 1 1/2 teaspoon sugar
5. 1 1/2 teaspoon salt
6. tomato sauce and cheese- extra toppings of your choice
This pizza is not fancy. You don't need any crazy equipment or ingredients for this taste afternoon delight. Let's get started.
1. Get a medium/large mixing bowl and combine in all dry ingredient- flour, yeast, sugar & salt. Mix together with a spatula or fork (whatever ya got clean really!)
* Gluten-free dough does not have as much flavor as normal dough, so I also add garlic powder and some Italian seasonings during this step.
2. Add in the olive oil and your warm water to the mix, use the spatula or your hands and continue to fold the dough to work air into the dough. It should be sticky at this point, drenched in olive oil.
3. Leave the dough in your olive oil covered mixing bowl and cover with plastic wrap for about an hour until the dough rises about 100% of its original size. Just give it an hour and eyeball it!

4. After an hour, place in the refregerator for the last 15 minutes and preheat the oven at 400 degrees Fahrenheit or 200 degrees Celsius.

The dough should look whipped and fluffy once you've allowed the appropriate time for rising.
6. Grab an oven rack tray, cover it with parchment paper and sprinkle a decent amount of flour on top before spreading the dough across the parchment paper evenly to create your crust.
7. Place the dough into the oven for 15 minutes, or until the edges are light brown and top has a nice firm cooked layer.
8. Take the new light brown crust out of the oven and add your desired pizza toppings before returning the pizza into the oven for another 10 minutes, or until crust is golden brown and toppings have reached the desired color.
* for my pizza which is pictured above and below, I added:
tomato sauce, rosemary, diced chilis, minced garlic as a base and added pizza cheese along with sliced mozzarella to the top of the pizza and cooked until golden brown... which was about the same time as it took me to finish my second glass of wine ;)



Enjoy, fresh out of the oven or add chili flakes and truffle oil for a little more flavor!
