GFH Original: Roasted Vegetable Dinner

Ever felt stuck in a rut, not knowing what to do or where to turn... Well, fear not! This classic, flavor rich dish is here to save the day.


I love making this meal when I have a few people over to the house and we can't figure out what to make for dinner to please everyone. What makes it so amazing is that you can literally use any vegetables that you happen to have in your pantry at the time and make this dish your own.



Never though you could eat an entire meal of veggies and not feel like you're missing out on something? Think again, you definitely got this.


Make this meal once and I'm confident it will become a staple in your household. It's one of the easiest and cheapest meals I keep on rotation because you use whatever you got, chop it up, throw it onto a baking sheet and go watch TV for the next 20 minutes while the oven does all the work.


Ready to have your mind blown?


What you'll need:


1. An assortment of veggies. These are the ones I normally use:

- 2 sweet potatoes

- 1 bag of frozen cauliflower florets (or 1 whole fresh head of cauliflower)

- 1 onion

- 4 cloves of garlic

- 1 zucchini

- 2 red chilis

2. Olive oil

3. Seasonings of choice

- cayenne pepper, rosemary, chili powder, garlic powder, red chili flakes, salt & pepper



1. Preheat oven to 200 degrees C or 350 degrees F. Chop up all the veggies into bite size chunks

2. I like to microwave the sweet potato and cauliflower in a microwave safe bowl with a little water in the bottom to give them an initial steam bath before going into the oven. You can microwave steam them for 4-5 minutes with proper ventilation.

3. Once the denser veggies are steamed, place all the veggies on to one cooking tray on top of parchment paper

4. Coat with olive oil and season accordingly. Cook for 20 mins or until golden brown and soft to the touch (with a fork, obviously)


Things to remember:


- Make it your own! Toss in your favorite veggies or seasoning to make this dish the meal of your dreams.

- If you need some more substance, consider heating up a bag of cauliflower rice and throwing the flavor rich roasted veggies on top.

- To spice it up, drizzle on your go-to hot sauce
