There is nothing better to me than a quick and easy meal I can whip up for my friends and family. This spicy pasta dish was introduced to me at the very early stages of my gluten-free journey and it has been a staple ever since... Well, if I'm being honest, more like an addiction.

If seeing this image doesn't make your mouth water, then this recipe is not for you my friend.

Everyone loves a good aglio e olio, traditionally made with garlic, olive oil and red chili flakes if you're feeling really adventurous. Well, here at GFH we've turned this inherently simple recipe up a few degrees, literally.

What you'll need in the pantry:
Olive oil
Gluten-free spaghetti noodles
3-4 garlic cloves or already minced garlic
3-4 small red chilis (like in the picture)
Vegetarian mince (Quorn is the brand I use)
Now, let's get cookin'
1. Get out your chopping board and start dicing up your chilis and garlic while you boil a pot of salted water.
2. Drop some of your gluten-free spaghetti noodles in the pot of salty water (more or less depending on how hungry you and your peeps are)
3. While the noodles cook, coat the bottom of a medium pan with olive oil, enough to cover the bottom of the pan.
4. Drop in the minced chilis and garlic and set to low heat. *IMPORTANT* Careful not to burn the garlic, the oil should be hot, but not bubbling. Nothing worse than burnt garlic! Heat the oil, chili and garlic mixture for 10 minutes so that the oil is infused with the flavors.
5. In a separate pan you can add your frozen Quorn Mince and cook as directed on the package. This step isn't entirely necessary but, it does add a bit of hardiness to your meal and it's a great way to sneak in your veggies.
6. Once the noodles are cooked al dente and the veggie mince is cooked through, add both to the chili/garlic infused oil and toss.
7. Serve immediately, add parmesan cheese, salt and pepper to taste.
Things to remember:
- Lessen the amount of chili and garlic if you don't use a whole pack of noodles
- Start out small if you are not good with spicy food
- Wash your hands immediately and don't touch your eyes after handling the chili!
